Yam flour (Elubo) is a smooth, dried flour made from fresh yam tubers. The yam is peeled, sliced, dried thoroughly, and then milled into a fine powder. It is popularly used in Nigeria to prepare Amala, a traditional swallow usually enjoyed with soups such as Ewedu, Gbegiri, Okro, or assorted meat soups. Good-quality yam flour should have a clean, natural yam aroma, fine texture, and good colour, and when prepared, it should produce a smooth, soft and stretchy Amala.
